Chocolate and Cherries Layered Dessert
1-14oz can sweetened condensed milk
1/2 cup unsweetened cocoa
2 tblsp water
6oz cream cheese, softened
1-21oz can cherry pie filling, chilled
1 cup chopped pecans
pecan halves
2 tblsp margarine
1 1/2 tsp vanilla extract
8oz cool whip, thawed
additional cool whip
1-10 3/4 oz frozen loaf pound cake, thawed, cut vertically into thirds, then sliced
In medium saucepan combine condensed milk, cocoa, margarine and water. Over low heat, cook and stir until margarine is melted. Remove from heat, stir in vanilla. Cool. In large mixer bowl beat cream cheese until fluffy. gradually beat in chocolate mix until well blended. Chill 10 minutes. Fold 1 1/2 cups cool whip into chocolate mix. In 3 quart glass serving bowl, layer half of the cake strips, then half of the chocolate mix. Top with cherry filling, then remaining 2 cups of cool whip. Sprinkle with chopped pecans, then remaining cake strips and chocolate mix. Garnish with additional cool whip and pecan halves. Chill at least 5 hours. Refrigerate.
